The main difference between the two types of cinnamon is the coumarin content. Coumarins are blood thinners found in many different plants. Long-term use of coumarin can cause excessive thinning of the blood. Cassia species have 1,200 times higher levels of coumarins and should therefore be used sparingly compared to Ceylon cinnamon. Ceylon cinnamon can be used indefinitely without any health risks.
