In addition to being a source of various biologically active substances, vitamins, minerals, organic acids, papaya is a source of four types of proteolytic enzymes - papain (about 10%), chymopapain A and B (between 26-30%), glycyl endopeptidase III and IV (23 -28%) and caricaine (14-26 %). These enzymes demonstrate extremely beneficial effects on the digestive system, gut microbiome, metabolism, gastrointestinal health, and the body's immune defenses.
